SHRIMP CURRY DEMONSTRATION AT THE SOUTHERN WOMEN'S SHOW

We had a great time at the Southern Women's Show! Chef Jay and Ernie prepared Shrimp Curry! Below is the recipe.

Shrimp (any size will do, we used 16/20 per lb)
Granny Smith Apples
Prep: Coat shrimp in curry powder, dice granny smith apples and sweet onions.
Pour white wine in sauté pan and place curry coated shrimp in pan. In a separate pan add apples, golden raisins, sweet onion and thyme with white wine. Let all these ingredients reduce in the wine until they are almost dry. Once they are almost dry add heavy cream, coconut milk, and lime zest into the sauté pan. Once the consistency becomes a little thick and not too soupy, add your shrimp into the sauté pan and continue to cook until the shrimp is fully cooked. Place rice on plate and add the desired amount of shrimp on top of the rice, top with mango chutney. Sprinkle with chives if desired. Attached is a link to the cooking demonstration. Enjoy!
